
Big news! The sun came out and the weather was finally warm this week.
Our outdoor kitchen is open and I’ve been prepping our lunches and dinner out there then using either the flattop or the gas grills.
More big news for me anyway, I finally after many tries succeeded in making a perfect French omelette!
Making a perfect omelette is often a test to see how well a chef can cook. I can do it now! Yay!
I know that’s not a big deal to anyone but me but it is an achievement I wanted to note.

I made an herb omelette filled with Swiss cheese and has a strawberry and spinach salad with it. I made a classic French bistro vinaigrette.
It was an amazing lunch. It transported me to a tiny bistro somewhere in my mind.
For dinner one night I made boneless bbq chicken thighs with sweet potatoes.
It was beautiful out and we had a busy day so this was a quick and easy meal.

The next day I made us salads with the leftover chicken with fruit which was topped with a raspberry vinaigrette.
The next night I grilled a skirt steak and tried a new recipe which was soooo good!
I made a cold salad with black beans, mangoes and avocado. The photo doesn’t do the salad any justice.

By the way, I always have bags of frozen mango and avocado chuncles on hand.
I made the black bean salad with them still frozen and they were perfect by the time the steak was ready.

For lunch the next day I made us another salad with the leftover steak, sweet potatoes from two nights before, the black bean salad and the rest of the French bistro vinaigrette.

So damn delicious! I actually felt like cooking again and came up with ideas easily one the weather got nicer.
We woke up one morning to a beautiful sunrise. We sat on our front porch with our tea and coffee with the girls.
The sun got warm fast. We were loving it! The girls were hysterical not being used to the bright sunshine. 🤣


My garden is doing much better. Thank you to my reader who told me to cut out the nonsense stuff and fertilize my tomatoes.
I actually fertilized everything. That along with the sunshine and warm days let me know my garden is going to be fine.
In fact, I have 3 small little San Marzano tomatoes already! I’m so excited that I grew them from a seed!

I’ll be writing my garden update soon with lots of photos.
I have been taking photos of my lupines blooming everyday. I am hoping I can take all the photos and make it into a movie to watch how the flowers bloomed.
Tomorrow project is unloading a trailer full of mulch from the front of our house and transport it around the new veggie garden.
